Saturday we enjoyed a nice breakfast buffet, and truly thought we might not need another meal for the duration. But common sense prevailed, and we sorted through Rick Bayless's Mexico, One Plate at a Time for interesting recipes ... after all, the ingredients would be easy to find!
Having settled on a selection of six meals, we decided to shop for three. This turned out to be a wise choice, as the portions were plentiful and there's a lot of detail work in the preparation (dicing, pepper preparation, sauces...). The results, though, were well worth the effort.
We first enjoyed a "Mexican Rice Supper" ... the "Spanish rice" from our childhood, made fabulous with the addition of a hand-made salsa and some chorizo. We also made up a pound or so of dried beans, which accompanied many meals.
During the days, Carolyn concentrated on completing the central motif on a counted-cross-stitch piece she's been working on, off-and-on, for several years now. When she needed a break from that activity, the 2,200 digitized family photos were in need of identification. After the first run-through, though, each one STILL needed to be reviewed AGAIN to be sure everyone in the photo had been identified. A LOT of detail work (with which Linda assisted), and a Great Leap Forward for our work on the family tree.
Linda caught up on reading herself, managed a BIG stack of emails, and helped ensure that meals were complete and on time. All in all, a very quiet few days, but a lot of pleasure in these big accomplishments!
